Serves: Makes about 20 squares
  • 1 package (18.25 ounces) Cake Mix Doctor Simply Yellow mix
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • 3 large eggs
  • 1 cup canned pumpkin (or pureed and cooked winter squash)
  • ½ cup water
  • ⅓ cup vegetable oil
  1. Place a rack in the center of the oven, and preheat the oven to 350 degrees. Grease and flour a 13- by 9-inch baking pan and set aside.
  2. Place the cake mix, cinnamon, nutmeg, ginger, and allspice in a large mixing bowl and whisk to combine. Add the eggs, pumpkin, water, and oil, and beat on low until smooth, about 1 minute. Turn the batter into the prepared pan, and place the pan in the oven.
  3. Bake until the cake springs back when lightly pressed with your finger, 25 to 30 minutes. Remove the pan from the oven, and let the cake cool slightly while you prepare the glaze.
Orange Glaze:
  1. Place 2 tablespoons orange juice in a small glass bowl and heat in the microwave oven on high power for 10 seconds. Whisk in 1 cup powdered sugar until smooth. If you want a creamier icing, whisk in 2 tablespoons soft butter.
  2. Spread the glaze over the cake. Cut into squares and serve.
